Ingredients
Filling:
- 1 lb. 99% ground turkey
- 1 Tbsp lime juice
- ¼ cup cilantro
- ½ cup water
- 4 scallions
- ½ tsp chopped red pepper
- ½ tsp sesame oil
- 1 tsp fish sauce
- ½ tsp salt
- 1 tsp mirin
Sauce:
- ½ cup peanut butter
- 2 Tbsp rice vinegar
- 3 Tbsp low sodium soy sauce
- 3 Tbsp brown sugar
- 1 tsp red pepper paste
- 1 tsp fish sauce
- 2 tsp lime juice
- ½ cup water

Directions
Spray a large skillet with canola oil and cook ground turkey on medium-high heat for 5-7 minutes, stirring and chopping it with your spoon to separate it into small pieces.
Add the rest of the filling ingredients, cover and continue to cook until the meat is done. Add additional water if needed.
In a separate small pan, place sauce ingredients and cook, stirring frequently, on medium heat until well blended and a good consistency. Add additional water if needed.
To serve, place one washed bibb leaf lettuce on plate and fill with 1-2 Tbsp. of filling. Top with sauce and enjoy. Add a Thai style vegetable salad if desired.
